Hi Tom! I found this post while re-researching Monica Sheridan for a novel (set in Ireland) that I’m writing. I had her cookbook in the 2000’s, since I was writing a different novel, also partly set in Ireland and wanted to use her TV and radio shows as part of the settings. I hadn’t remembered the part about using garlic in the 1930’s in Ireland….But I DO recall her short bit about corned beef and cabbage, which it is widely touted is not an Irish dish. I found several references to it in Irish cookbooks and even in the past 5 years or so there was a nice article in one of the Irish papers by a reporter who had sliced corned beef sandwiches as a boy in his lunches. Anyway, I digress. I see from your posts that your write about the priest abuses. I incorporated that/those in the first novel I referred to. All the novels are still in progress and I feel like I’ll never finish them. But I’’m happy I found your Substack and will read more. I love food. Will be visiting Dingle in May, 2025 for a writing conference. Will be fun..
